Chewy, gooey, chocolatey, indulgent, comforting, these brownies are INCREDIBLE. Equal parts chewy chocolate chip cookie and fudgy brownies with a layer of Oreo cookies in the middle- stuff of the dreams!

Why are they called Slutty Brownies you ask?

Honestly, I have no idea lol. All I know is that these brownies were the “it” thing back in 2000's America. As somebody who didn’t grow up there, I actually had never heard of them until last week where all I could see on my explore feed were these brownies. I’m not usually the one to get behind viral social media trends, but this was definitely a case of “social media made me do it” and I ain’t complaining hehe.

These brownies are INSANEEEE! They are definitely very indulgent, and veryyy addictive so proceed with caution.

They’re also very forgiving and incredibly easy to make. If you want to be a little hands off, you can also use a brownie mix but personally I like to make mine from scratch because I loveeee my recipe. You can try using a brownie mix here, however, I haven’t tested that with the bake timings so you’d have to play around a little bit to adjust that.

Recipe

Makes: 1x 18cm square tin

Ingredients

For the cookie dough:

  • 30g unsalted butter (a)

  • 30g unsalted butter (b), softened at 25-27°C

  • 25g dark or light brown sugar (I prefer dark)

  • 40g caster sugar

  • 1/4 tsp vanilla paste

  • a pinch of cinnamon powder

  • 30g eggs, at 27°C * (see note)

  • 75g plain flour

  • 1/4 tsp baking powder

  • big pinch of salt

  • 50g good quality dark chocolate, chopped into chunks (I use Callebaut 54.4%)

  • 12-16 Oreo cookies

For the brownie batter:

  • 90g good quality dark chocolate (I use Callebaut 54.4%)

  • 80g unsalted butter, cut into rough cubes

  • 75g eggs, at 27°C * (see note)

  • 85g caster sugar

  • 55g plain flour

  • big pinch of salt

  • 1/2 tsp vanilla paste

  • extra sea salt flakes, to sprinkle on top

Method

Make the cookie dough first:

  • Grease and line an 18cm (7 inch) square baking tin with parchment paper. Set aside.

  • In a small pot, add butter (a) and cook over medium heat until browned.

  • In a medium bowl, add all of the browned butter, butter (b), sugars, vanilla and cinnamon powder. Mix until slightly pale in colour ~ 1-2 mins.

  • Add the egg and mix until well combined & the batter looks wee emulsified.

  • Add the dry ingredients and mix to combine.

  • Lastly, add the chopped chocolate and fold to combine.

  • Transfer the cookie dough into the prepared baking tin. Use the spatula to spread it out evenly. You can also use a palette knife if needed.

Layer the Oreos:

  • Layer the Oreos on top of the cookie dough. You want them to be nicely snug so break a few if needed to get it in the corners too. Set aside.

  • You also want to preheat your oven to 170°C (fan-forced) or 180°C (deck oven) at this point.

Make the brownie batter:

  • Melt the chocolate and butter in the microwave, in intervals, until completely melted. Set aside.

  • In a bowl, add the egg and sugar and whisk until light pale in colour and is slightly voluminous ~ 3-5 mins. (You can also do this step with a hand held beater or a stand mixer.)

  • Add the slightly cooled chocolate- butter mixture and mix to combine well.

  • Lastly, add the flour, salt and vanilla and mix to combine.

  • Pour the brownie batter on top of the layered oreos and use a palette knife to spread evenly.

  • Sprinkle with a little extra salt flakes on top.

  • Bake for 21-25 mins or until a skewer inserted comes out almost clean. ** (see note)

  • Let them cool completely (this is the hardest part!) before slicing into them. Bon appetite!

Notes:

*- you need a total of 2 large eggs for this entire recipe. I recommend weigh the eggs in a separate bowl, whisk until homogenous and then weigh for the separate components.

**- My oven runs a little hotter so mine were done in exactly 21 mins. If your oven tends to run a bit slower or cooler, you can increase the temp by 5°C and bake to the indicator mentioned.
