Program curriculum

When you sign up to work with me, we’ll start off with a one-on-one phone call to talk about your goals. From there, we will develop a customised plan to move you through the following steps:

STEP 1: Getting in the right mindset

Most people don’t succeed in their skill set not because they are not “cut out” for it but because we are not ready for it, mentally. Getting in the right mindset is as important as knowing how to temper chocolate if you want to succeed as a baker. Inside the course, we are going to focus on building confidence in yourself and your skillset and develop a winning mindset that can achieve all your goals.

STEP 2: Understanding the science behind baking

This is the heart and soul of pastry & baking. Pastry is a science so it’s important to learn and understand the workings that go on behind the scenes that make a dessert work. We are going to understand the WHY and WHAT of ingredients, the chemical reactions that take place and how ingredients react together to create something extraordinary.

STEP 3: Mastering basic skills

This is the step when we get down and dirty in the kitchen and put the knowledge to PRACTICE. Learn the most basic of techniques that will create a solid foundation for growth and advancement. Practice techniques to ensure you are comfortable with it and know the FEEL of them. Think sponges, cremeux ganache, gels, choux, pastry doughs, puff pastry, croissant and chocolate tempering.

STEP 4: Understanding flavours, textures and balance

During this step, we are going to learn the basic flavour profiles that work together. How to incorporate textures and flavours into your desserts to create balance and harmony. The goal is to focus on balancing a dessert to bring out individual flavours yet be cohesive.

STEP 5: Future avenues

This step is all about exploring and discovering the career opportunities available now that you have the appropriate and desired skill set to bake professionally. We’ll also discuss how costing works so that you create a profitable baking business. Uncover how you can choose a career path utilising this new skill set to live a happy, fulfilled life.
