Brown Butter Pecan Brownies

Try saying that super quick. Blahahdhfrhrhkr is what I say after the 4th time. Just me? Okay, moving on….

Hi there, gorgeous! How are we doing today? I have a special treat for you. If you are a brownie lover, and let’s be honest, WHO’S NOT?!, I’m about to make you very happy. These are legit the BEST brownies you’ll ever have. I know, everybody says that about their brownie recipe and all that, so I’m gonna let YOU be the judge here. Sounds fair? I mean, tell me you’re not already drooling….(because I am drooling hard!)

Let’s keep it simple. Here’s why you’re gonna LOVE this:

  • Well, firstly, they are FRICKIN’ delicious!!! That’s a good place to start, I reckon.

  • These are the fudgiestttt brownies ever with just the right amount of gooey. Hello melty choco chips, yum!

  • Browning that butter really enhances the chocolatey flavour and you get a more depth of flavour instead of your brownie tasting just plain chocolatey, do you know what I mean?

  • They are SO quick and easy to make! If you have 30 minutes in life, you can make this. (And I mean the ingredients but you know that)

  • Doesn’t matter if you’re an amateur baker who’s never baked in their life or a pro chef, this recipe is ‘one size fits all’ kinda situation so no pre skills necessary, thank you very much!

Recipe

Serves: 4-6

Ingredients

  • 175g unsalted butter

  • 190g good quality dark chocolate, min. 70% cocoa solids

  • 3 large eggs

  • 160g castor sugar

  • 1/2 tsp vanilla extract

  • 110g plain flour

  • big pinch of salt

  • 50g pecans, roasted and chopped

  • handful of extra chocolate callets/chunks *

Method

  • Preheat oven to 160C.

  • Roast pecans for 5-8mins or until slightly brown. Let cool and roughly chop to smaller pieces.

  • Increase oven to 170C. Grease and line an 8” square baking tin with baking paper. Keep aside.

  • In a small saucepan, heat the butter on medium heat until it melts and eventually browns. Swirl occasionally to prevent the butter from burning. The butter will first melt, start to sizzle, foam and eventually brown with milk solids settled at the bottom ~roughly 3-4 mins. Remove from heat.

  • Weigh up chocolate in a small mixing bowl. Add your hot browned butter over the chocolate and stir to completely melt the chocolate. If needed, you can use a double boiler/microwave to melt any unmelted chocolate. Keep aside to cool.

  • In another mixing bowl, whisk together the eggs, sugar and vanilla extract for 3-4 mins or until the sugar has slightly dissolved.

  • Add in the chocolate-butter mix and mix until combined.

  • Fold in the flour and salt and lastly add in the roasted pecans and mix until just combined.

  • Pour the batter into the prepared baking tin. Top with whole pecans and chocolate callets/chunks.

  • Bake at 170C for 18-20 mins or until a skewer inserted comes out clean.

  • Let cool completely before slicing. Serve on its own or with a giant scoop of vanilla ice cream. Bon appetite!

Notes:

*- Please do not use chocolate chips here. If you don’t have chocolate callets, chop a bar of chocolate.
